Ingredients

- 2 pounds beef chuck, cut into cubes
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, sliced
- 1 cup red wine
- 1 cup beef broth
- 1 cup tomato sauce
- 1/2 cup brown sugar
- 1 tablespoon paprika
- Salt to taste
- Freshly ground black pepper to taste
- 2 pounds gnocchi
Instructions
- In a large pot, brown the beef cubes on all sides.
- Add the chopped onion, garlic, and carrots, and sauté until softened.
- Stir in the red wine, beef broth, tomato sauce, and brown sugar.
- Season with paprika, salt, and pepper, then bring to a boil.
- Reduce heat, cover, and simmer for about 1.5 to 2 hours, until the beef is tender.
- Meanwhile, prepare the gnocchi according to package instructions.
- Serve the beef stew over the gnocchi.
Notes
- This dish can be made a day in advance for better flavor.
- Adjust the sweetness by varying the amount of brown sugar.
