Ingredients

  • 1 cup dark chocolate chips (60-70% cocoa)
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fresh or frozen cherries, pitted and chopped
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat your oven to 375°F and grease four ramekins with butter, then lightly coat them with granulated sugar.
  2. In a microwave-safe bowl, combine dark chocolate chips and butter. Heat in the microwave, stirring every 30 seconds until melted and smooth. Allow to cool slightly.
  3. In a separate bowl, whisk egg yolks with granulated sugar, vanilla extract, and salt until light and fluffy. Gradually mix in the cooled chocolate mixture.
  4. In another bowl, whip egg whites until stiff peaks form. Carefully fold the whipped egg whites into the chocolate mixture in three parts, then gently mix in the chopped cherries.
  5. Spoon the soufflé batter into the prepared ramekins and place them on a baking sheet. Bake for 12-15 minutes until risen and set around the edges, soft in the center.
  6. Remove from the oven and let rest for a minute. Optionally, sprinkle with powdered sugar before serving.
