Delightful pandan coconut madeleines that offer a unique twist on the classic French treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup pandan juice
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 375°F (190°C) and grease the madeleine pans.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix the melted butter and sugar until combined. Add eggs one at a time, then add vanilla extract and pandan juice.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined; fold in the shredded coconut.
  5. Fill each madeleine mold about three-quarters full with the batter.
  6. Bake for 10-12 minutes until the edges are golden brown.
  7. Remove from the oven and let cool before serving.
