Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup pandan juice
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C) and grease the madeleine pans.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the melted butter and sugar until combined. Add eggs one at a time, then add vanilla extract and pandan juice.
- Gradually mix the dry ingredients into the wet ingredients until just combined; fold in the shredded coconut.
- Fill each madeleine mold about three-quarters full with the batter.
- Bake for 10-12 minutes until the edges are golden brown.
- Remove from the oven and let cool before serving.
Notes
- Allow madeleines to cool completely before dusting with powdered sugar.
- Pairs well with tea or coffee.
