Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp lemon juice
  • ½ cup chicken broth
  • Salt & black pepper, to taste


Instructions

  1. Pat chicken dry, then season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through (165°F internal temperature). Remove and set aside.
  3. In the same skillet, add garlic and rosemary; sauté for 30 seconds. Stir in Dijon mustard, lemon juice, and chicken broth. Simmer for 2–3 minutes until slightly thickened.
  4. Return chicken to skillet, spoon sauce over the top, and cook for 1–2 more minutes.
  5. Plate chicken with extra rosemary Dijon sauce over the top. Pairs wonderfully with roasted potatoes or steamed veggies.

Notes

  • For a stronger flavor, use fresh rosemary instead of dried.
