Delicious deviled duck eggs elevated with homemade beef tallow mayo.

- 6 duck eggs
- 1/2 cup beef tallow
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt to taste
- Freshly ground black pepper to taste
- Chives for garnish
Instructions
- Hard boil the duck eggs. Once cool, peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl. Add the beef tallow, Dijon mustard, apple cider vinegar, salt, and pepper.
- Mash the yolks and mix until smooth and creamy.
- Fill the egg whites with the yolk mixture.
- Garnish with chopped chives.
