Description

A delicious and creamy cheesecake that combines the flavors of cinnamon rolls and honeybuns, perfect for dessert lovers.


Ingredients

  • 2 cups graham cracker crumbs (or crushed cinnamon cookies)
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup sour cream
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons flour
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper and lightly grease the sides.
  2. Combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Press firmly into the bottom of the pan. Bake for 10 minutes. Let cool slightly.
  3. Beat cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla. Mix until just combined.
  4. In a small bowl, mix brown sugar, cinnamon, flour, and melted butter to form a paste for the cinnamon swirl.
  5. Pour half of the cheesecake batter over the crust. Drop spoonfuls of the cinnamon swirl on top and swirl gently with a knife. Repeat with the remaining batter and cinnamon swirl.
  6. Bake for 55–65 minutes, or until the center is just set. Turn off the oven, crack the door, and let it cool for 1 hour. Then chill in the fridge for at least 4 hours or overnight.
  7. Mix powdered sugar, milk, and vanilla to make the glaze. Drizzle over the chilled cheesecake before serving.

Notes

  • For a stronger cinnamon flavor, increase the amount of cinnamon in the filling.
  • Make sure the cream cheese is softened to avoid lumps in the batter.
  • Chilling overnight enhances the flavor and texture of the cheesecake.
