A delicious and creamy cheesecake that combines the flavors of cinnamon rolls and honeybuns, perfect for dessert lovers.

- 2 cups graham cracker crumbs (or crushed cinnamon cookies)
- 1/2 cup unsalted butter, melted
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 1/4 cup sour cream
- 3 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons flour
- 4 tablespoons unsalted butter, melted
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper and lightly grease the sides.
- Combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Press firmly into the bottom of the pan. Bake for 10 minutes. Let cool slightly.
- Beat cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla. Mix until just combined.
- In a small bowl, mix brown sugar, cinnamon, flour, and melted butter to form a paste for the cinnamon swirl.
- Pour half of the cheesecake batter over the crust. Drop spoonfuls of the cinnamon swirl on top and swirl gently with a knife. Repeat with the remaining batter and cinnamon swirl.
- Bake for 55–65 minutes, or until the center is just set. Turn off the oven, crack the door, and let it cool for 1 hour. Then chill in the fridge for at least 4 hours or overnight.
- Mix powdered sugar, milk, and vanilla to make the glaze. Drizzle over the chilled cheesecake before serving.
Notes
- For a stronger cinnamon flavor, increase the amount of cinnamon in the filling.
- Make sure the cream cheese is softened to avoid lumps in the batter.
- Chilling overnight enhances the flavor and texture of the cheesecake.
