Description

Duchess Potatoes are a classic French side dish made from creamy mashed potatoes piped into elegant shapes and baked until golden brown.

Ingredients

Scale
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 2 egg yolks
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional)
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
  3. Mix in butter, heavy cream, egg yolks, salt, pepper, and nutmeg until creamy.
  4. Transfer the mixture to a piping bag with a star tip. Pipe swirls onto the prepared baking sheet.
  5. Beat the whole egg and brush over the tops for a golden finish.
  6. Bake for 20–25 minutes or until golden brown.
  7. Serve warm as an elegant side dish.

Notes

  • For a richer flavor, use Yukon Gold potatoes.
  • Make sure the potatoes are well-drained to avoid a watery mixture.
  • These can be prepared ahead of time and baked just before serving.
