Description
Duchess Potatoes are a classic French side dish made from creamy mashed potatoes piped into elegant shapes and baked until golden brown.

- 2 lbs potatoes, peeled and cubed
- 4 tbsp unsalted butter
- 1/2 cup heavy cream
- 2 egg yolks
- Salt and pepper, to taste
- Pinch of nutmeg (optional)
- 1 egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
- Mix in butter, heavy cream, egg yolks, salt, pepper, and nutmeg until creamy.
- Transfer the mixture to a piping bag with a star tip. Pipe swirls onto the prepared baking sheet.
- Beat the whole egg and brush over the tops for a golden finish.
- Bake for 20–25 minutes or until golden brown.
- Serve warm as an elegant side dish.
Notes
- For a richer flavor, use Yukon Gold potatoes.
- Make sure the potatoes are well-drained to avoid a watery mixture.
- These can be prepared ahead of time and baked just before serving.
