A simple and delicious recipe for Easy Cheesy Ground Beef Enchiladas that the whole family will love.

- 1 lb ground beef
- 1 small onion, finely chopped
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chilies (optional)
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro (optional for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onions are softened. Drain any excess fat.
- Stir in the cumin, chili powder, salt, pepper, and diced green chilies (if using). Mix well.
- Spread a small amount of enchilada sauce on the bottom of the baking dish. Lay out the tortillas, fill them with the beef mixture, and roll them up. Place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled-up tortillas. Sprinkle the shredded cheddar cheese on top.
- Bake uncovered in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
- Garnish with fresh cilantro if desired and serve hot.
Notes
- Feel free to customize the filling with your favorite ingredients.
- For a spicier version, add more chili powder or jalapeños.
