Description

A simple and delicious recipe for Easy Cheesy Ground Beef Enchiladas that the whole family will love.


Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 can (10 oz) enchilada sauce
  • 1 can (4 oz) diced green chilies (optional)
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onions are softened. Drain any excess fat.
  3. Stir in the cumin, chili powder, salt, pepper, and diced green chilies (if using). Mix well.
  4. Spread a small amount of enchilada sauce on the bottom of the baking dish. Lay out the tortillas, fill them with the beef mixture, and roll them up. Place them seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled-up tortillas. Sprinkle the shredded cheddar cheese on top.
  6. Bake uncovered in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  7. Garnish with fresh cilantro if desired and serve hot.

  • For a spicier version, add more chili powder or jalapeños.
