A simple and delicious recipe for cod fillets marinated in a ginger soy sauce, perfect for a quick weeknight dinner.

- 4 cod fillets (about 6 oz each)
- 3 tablespoons soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon fresh ginger, grated
- 2 garlic cloves, minced
- 1 tablespoon sesame oil or olive oil
- 1 tablespoon rice vinegar or lime juice
- 2 green onions, sliced (optional, for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- In a small bowl, whisk together the soy sauce, honey, ginger, garlic, sesame oil, and rice vinegar to make the marinade.
- Place the cod fillets in a shallow dish or zip-top bag and pour the marinade over them. Let it marinate in the fridge for 20–30 minutes.
- Preheat your oven to 400°F (200°C). Place the marinated cod on a lined baking sheet and bake for 12–15 minutes, or until the fish flakes easily with a fork.
- Garnish with green onions and sesame seeds if desired. Serve with rice, steamed vegetables, or noodles.
Notes
- For a spicier kick, add red pepper flakes to the marinade.
- Make sure not to overcook the cod to keep it moist and tender.
