Ingredients

  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tablespoon sesame oil or olive oil
  • 1 tablespoon rice vinegar or lime juice
  • 2 green onions, sliced (optional, for garnish)
  • Sesame seeds (optional, for garnish)


Instructions

  1. In a small bowl, whisk together the soy sauce, honey, ginger, garlic, sesame oil, and rice vinegar to make the marinade.
  2. Place the cod fillets in a shallow dish or zip-top bag and pour the marinade over them. Let it marinate in the fridge for 20–30 minutes.
  3. Preheat your oven to 400°F (200°C). Place the marinated cod on a lined baking sheet and bake for 12–15 minutes, or until the fish flakes easily with a fork.
  4. Garnish with green onions and sesame seeds if desired. Serve with rice, steamed vegetables, or noodles.

Notes

  • For a spicier kick, add red pepper flakes to the marinade.
