Description

A comforting and hearty soup filled with meatballs and noodles.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 teaspoons Italian seasoning
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 cup noodles
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped carrots
  • 1 cup chopped celery


Instructions

  1. In a bowl, combine ground beef, breadcrumbs, egg, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat the beef broth over medium heat.
  3. Add diced tomatoes, carrots, and celery to the pot, and bring to a simmer.
  4. Carefully add the meatballs to the pot and cook for about 15 minutes.
  5. Add the noodles and cook until they are tender.
  6. Serve hot, garnished with parsley if desired.

Notes

  • For a richer flavor, you can sauté the vegetables before adding the broth.
