Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 2 teaspoons Italian seasoning
- 4 cups beef broth
- 1 cup diced tomatoes
- 1 cup noodles
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped carrots
- 1 cup chopped celery
Instructions
- In a bowl, combine ground beef, breadcrumbs, egg, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, heat the beef broth over medium heat.
- Add diced tomatoes, carrots, and celery to the pot, and bring to a simmer.
- Carefully add the meatballs to the pot and cook for about 15 minutes.
- Add the noodles and cook until they are tender.
- Serve hot, garnished with parsley if desired.
Notes
- For a richer flavor, you can sauté the vegetables before adding the broth.
- Feel free to add additional vegetables like spinach or peas.
