Description

A delicious and hearty Ecuadorian soup made with tuna, vegetables, and spices.


Ingredients

  • 1 can tuna, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 carrot, diced
  • 3 cups chicken broth
  • 1 potato, diced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • salt and pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and garlic; sauté until onions are translucent.
  2. Add the diced carrots, potatoes, and bell pepper; cook for 5 minutes.
  3. Add diced tomatoes, chicken broth, cumin, and paprika; bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  5. Stir in the drained tuna and season with salt and pepper; cook for an additional 5 minutes.
  6. Serve hot.
