Description
A delicious and hearty Ecuadorian soup made with tuna, vegetables, and spices.
Ingredients

- 1 can tuna, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 carrot, diced
- 3 cups chicken broth
- 1 potato, diced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat. Add onion and garlic; sauté until onions are translucent.
- Add the diced carrots, potatoes, and bell pepper; cook for 5 minutes.
- Add diced tomatoes, chicken broth, cumin, and paprika; bring to a boil.
- Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Stir in the drained tuna and season with salt and pepper; cook for an additional 5 minutes.
- Serve hot.
Notes
- This soup can be served with avocado slices on top.
- Adjust the spices according to your taste.
