Description

A refreshing and delightful Elderflower & Lemonade Jelly with Mint Leaves, perfect for warm days.


Ingredients

Scale
  • 2 cups lemonade
  • 1 cup elderflower cordial
  • 2 tablespoons gelatin powder
  • 1/4 cup cold water
  • 1/4 cup fresh mint leaves, chopped
  • 1 lemon, zested and juiced
  • Mint sprigs for garnish


Instructions

  1. In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
  2. In a saucepan, combine the lemonade, elderflower cordial, lemon zest, and lemon juice. Heat over medium heat until just warm, but do not let it boil.
  3. Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. Add the chopped mint leaves to the mixture and stir well.
  5. Pour the mixture into a mold or individual serving cups.
  6. Refrigerate for at least 4 hours or until the jelly is set.
  7. Once set, carefully remove the jelly from the mold or serve directly in cups. Garnish with mint sprigs before serving.

Notes

  • For a more intense flavor, consider using fresh elderflowers if available.
  • You can also substitute the lemonade with sparkling water for a fizzy twist.
