A refreshing and delightful Elderflower & Lemonade Jelly with Mint Leaves, perfect for warm days.
Ingredients

- 2 cups lemonade
- 1 cup elderflower cordial
- 2 tablespoons gelatin powder
- 1/4 cup cold water
- 1/4 cup fresh mint leaves, chopped
- 1 lemon, zested and juiced
- Mint sprigs for garnish
Instructions
- In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
- In a saucepan, combine the lemonade, elderflower cordial, lemon zest, and lemon juice. Heat over medium heat until just warm, but do not let it boil.
- Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
- Add the chopped mint leaves to the mixture and stir well.
- Pour the mixture into a mold or individual serving cups.
- Refrigerate for at least 4 hours or until the jelly is set.
- Once set, carefully remove the jelly from the mold or serve directly in cups. Garnish with mint sprigs before serving.
Notes
- For a more intense flavor, consider using fresh elderflowers if available.
- You can also substitute the lemonade with sparkling water for a fizzy twist.
