- 1/2 cup beef broth

Instructions
- Season elk medallions with salt and pepper.
- In a skillet, melt butter over medium heat.
- Add garlic and sage, sautéing for 1-2 minutes.
- Add elk medallions and sear for 3-4 minutes on each side or until desired doneness.
- Remove medallions and keep warm.
- Add beef broth to the skillet and deglaze, scraping up the browned bits.
- Reduce sauce for a couple of minutes.
- Return elk medallions to the skillet, coating with the sauce before serving.
