Description

Elk medallions cooked in a rich and flavorful sage butter sauce, perfect for an elegant meal.


Ingredients

  • 4 elk medallions
  • 4 tablespoons butter
  • 2 tablespoons fresh sage, chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • Salt to taste
  • Pepper to taste


Instructions

  1. Season elk medallions with salt and pepper.
  2. In a skillet, melt butter over medium heat.
  3. Add garlic and sage, sautéing for 1-2 minutes.
  4. Add elk medallions and sear for 3-4 minutes on each side or until desired doneness.
  5. Remove medallions and keep warm.
  6. Add beef broth to the skillet and deglaze, scraping up the browned bits.
  7. Reduce sauce for a couple of minutes.
  8. Return elk medallions to the skillet, coating with the sauce before serving.
