Description

A delicious fusion of classic Mexican street corn and pizza, topped with cheesy goodness and zesty flavors.


Ingredients

  • 1 pizza crust
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh cilantro, chopped


Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Prepare the pizza crust according to package instructions.
  3. In a bowl, mix the corn, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
  4. Spread the corn mixture evenly over the pizza crust.
  5. Sprinkle mozzarella cheese on top of the corn mixture.
  6. Bake for 12-15 minutes or until the cheese is bubbly and golden.
  7. Remove from the oven and sprinkle with cotija cheese and cilantro before serving.

Notes

  • For extra flavor, consider adding jalapeños for a kick.
  • Serve with lime wedges on the side.
