- 1 pizza crust
- 1 cup corn kernels (fresh or frozen)
- 1 cup mozzarella cheese, shredded
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 1 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro, chopped
Instructions
- Preheat the oven to 450°F (230°C).
- Prepare the pizza crust according to package instructions.
- In a bowl, mix the corn, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper.
- Spread the corn mixture evenly over the pizza crust.
- Sprinkle mozzarella cheese on top of the corn mixture.
- Bake for 12-15 minutes or until the cheese is bubbly and golden.
- Remove from the oven and sprinkle with cotija cheese and cilantro before serving.
Notes
- For extra flavor, consider adding jalapeños for a kick.
- Serve with lime wedges on the side.
