Delicious and festive cranberry roll ups perfect for the holiday season.
Ingredients

- 1 cup fresh cranberries
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 4 large tortillas
- 1/2 cup chopped walnuts
Instructions
- In a saucepan, combine cranberries and sugar. Cook over medium heat until cranberries burst and mixture thickens.
- Remove from heat and stir in vanilla extract. Let cool.
- Spread cream cheese evenly over tortillas.
- Evenly distribute cranberry mixture on top of cream cheese.
- Sprinkle with chopped walnuts.
- Roll tortillas tightly and slice into pinwheels.
- Chill in the refrigerator before serving.
Notes
- These roll ups can be made a day ahead of time.
- For a sweeter version, add more sugar to the cranberry mixture.
