Ingredients

  • 2 cups cooked turkey, shredded or chopped
  • 1 cup bread crumbs
  • 1 cup cooked stuffing mix
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup celery, finely diced
  • 1/2 cup onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1/4 cup chicken broth (more if needed)
  • 1 tablespoon olive oil (for drizzling)


Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cooked turkey, bread crumbs, stuffing mix, dried cranberries, celery, onion, parsley, garlic powder, thyme, salt, and black pepper.
  3. Add the beaten egg and chicken broth to the mixture. Stir until everything is well combined. If the mixture feels too dry, add a little more chicken broth until it holds together.
  4. Using your hands, form the mixture into balls about 1 to 1.5 inches in diameter and place them on the prepared baking sheet.
  5. Drizzle the tops of the stuffing balls with olive oil for added flavor and crispiness.
  6. Bake in the preheated oven for 20-25 minutes, or until the balls are golden brown and heated through.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a spicier kick, add 1/4 teaspoon of red pepper flakes to the mixture.
