- 2 cups cooked turkey, shredded or chopped
- 1 cup bread crumbs
- 1 cup cooked stuffing mix
- 1/2 cup dried cranberries, chopped
- 1/2 cup celery, finely diced
- 1/2 cup onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 1/4 cup chicken broth (more if needed)
- 1 tablespoon olive oil (for drizzling)
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cooked turkey, bread crumbs, stuffing mix, dried cranberries, celery, onion, parsley, garlic powder, thyme, salt, and black pepper.
- Add the beaten egg and chicken broth to the mixture. Stir until everything is well combined. If the mixture feels too dry, add a little more chicken broth until it holds together.
- Using your hands, form the mixture into balls about 1 to 1.5 inches in diameter and place them on the prepared baking sheet.
- Drizzle the tops of the stuffing balls with olive oil for added flavor and crispiness.
- Bake in the preheated oven for 20-25 minutes, or until the balls are golden brown and heated through.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the mixture.
- Substitute the dried cranberries with chopped apples or raisins for a different flavor profile.
