Description
Delicious Finnish rice pasties are traditional pastries filled with rice porridge and wrapped in a thin rye crust.
Ingredients
Scale
- 2 cups water
- 1 cup short-grain rice
- 4 cups milk
- 1 teaspoon salt
- 2 cups rye flour
- ½ cup all-purpose flour
- 1 teaspoon salt
- 1 tablespoon melted butter
- 1 egg (for egg wash)
Instructions
- In a saucepan, bring water to a boil and add rice. Cook until the water is absorbed.
- Add milk and salt, and cook until the rice is soft and porridge-like. Let cool.
- In a bowl, mix rye flour, all-purpose flour, and salt. Add melted butter and enough water to form a smooth dough.
- Roll out the dough thinly and cut into circles.
- Place a spoonful of the rice filling in the center of each circle.
- Fold edges over and pinch to seal.
- Brush with egg wash and bake at 425°F (220°C) for 20-25 minutes until golden.
Notes
- Serve with egg butter for added flavor.
- Can be frozen after baking and reheated.
