Description

Delicious Finnish rice pasties are traditional pastries filled with rice porridge and wrapped in a thin rye crust.


Ingredients

Scale
  • 2 cups water
  • 1 cup short-grain rice
  • 4 cups milk
  • 1 teaspoon salt
  • 2 cups rye flour
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon melted butter
  • 1 egg (for egg wash)


Instructions

  1. In a saucepan, bring water to a boil and add rice. Cook until the water is absorbed.
  2. Add milk and salt, and cook until the rice is soft and porridge-like. Let cool.
  3. In a bowl, mix rye flour, all-purpose flour, and salt. Add melted butter and enough water to form a smooth dough.
  4. Roll out the dough thinly and cut into circles.
  5. Place a spoonful of the rice filling in the center of each circle.
  6. Fold edges over and pinch to seal.
  7. Brush with egg wash and bake at 425°F (220°C) for 20-25 minutes until golden.

Notes

  • Serve with egg butter for added flavor.
  • Can be frozen after baking and reheated.
