Ingredients

- 1 cup cooked beets, pureed
- 1/2 cup unsweetened cocoa powder
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch pan.
- In a bowl, mix together the pureed beets, cocoa powder, maple syrup, melted coconut oil, eggs, and vanilla extract until well combined.
- Add the baking soda and salt, and mix until smooth.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool before slicing into squares.
Notes
- Make sure the beets are cooked and pureed smoothly for the best texture.
- These brownies can be stored in an airtight container for up to a week.
