Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together almond flour, powdered sugar, and salt.
- In another bowl, whisk eggs, then add vanilla extract, lemon juice, and lemon zest.
- Combine the wet ingredients with the dry ingredients until fully incorporated.
- Drop tablespoon-sized dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
