Description

Deliciously light and tangy cookies made without flour, perfect for lemon lovers.


Ingredients

  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together almond flour, powdered sugar, and salt.
  3. In another bowl, whisk eggs, then add vanilla extract, lemon juice, and lemon zest.
  4. Combine the wet ingredients with the dry ingredients until fully incorporated.
  5. Drop tablespoon-sized dough onto the prepared baking sheet.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
