- 2 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- ½ cup erythritol (or another keto-friendly sweetener)
- 1 tsp baking powder
- Pinch of salt
- 4 large eggs
- â…“ cup melted coconut oil
- 1 tsp vanilla extract
- â…“ cup unsweetened almond milk
Instructions
- Preheat your oven to 350°F (180°C). Line an 8-inch (20 cm) round cake pan with parchment paper or grease it.
- In a large bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt.
- In a separate bowl, beat the eggs, melted coconut oil, vanilla extract, and almond milk until well combined.
- Add the wet ingredients to the dry ingredients and mix until you have a smooth batter.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Add ½ cup chopped walnuts or almonds for extra crunch.
- Try different flavor twists like: 1 tsp cinnamon or a pinch of chili powder for a spicy chocolate kick.
