  • 2 cups heavy whipping cream
  • 1/4 cup icing sugar
  • 1 tablespoon dried lavender flowers
  • 1 teaspoon pure vanilla extract
  • 1 package (17.3 ounces) frozen puff pastry (2 sheets), thawed
  • 1/2 cup pure honey
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Fresh lavender sprigs for decoration (optional)


Instructions

  1. Begin by preheating your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. On a floured surface, gently roll out the thawed puff pastry sheets to eliminate any creases. Cut each sheet into three equal rectangles and place them on the prepared baking sheet. Use a fork to poke holes in the pastry to prevent excessive puffing during baking.
  3. Bake the rectangles for about 15-20 minutes, or until they turn a beautiful golden brown and become crisp. Once done, take them out and allow them to cool completely.
  4. In a small saucepan, mix together the honey, granulated sugar, cornstarch, and water. Heat the mixture over medium heat, stirring constantly until it thickens and starts to bubble. Remove from heat and let it cool down.
  5. In a separate bowl, whip together the heavy cream, icing sugar, dried lavender, and vanilla extract until soft peaks form.
  6. To create your layered dessert, start by placing one puff pastry rectangle on a serving dish. Spread a generous layer of the lavender-infused whipped cream over it, followed by a drizzle of the cooled honey mixture. Repeat this process with another pastry layer, cream, and honey. Finish with a final puff pastry rectangle on top.
  7. Lightly dust the top layer with icing sugar and, if desired, add fresh lavender sprigs for an elegant touch. Refrigerate for at least 30 minutes to let the flavors blend beautifully before serving.
