A delightful and refreshing Fresh Pea & Mint Soup with Crème Fraîche, perfect for any occasion.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh or frozen peas
- 4 cups vegetable broth
- 1 cup fresh mint leaves, packed
- Salt and pepper to taste
- ½ cup crème fraîche (plus extra for serving)
- Lemon zest for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the peas and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the peas are tender.
- Remove the pot from heat and stir in the fresh mint leaves. Let the mixture cool slightly.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Return the soup to the pot and stir in the crème fraîche. Season with salt and pepper to taste.
- Reheat gently if necessary, but do not boil. Serve warm, garnished with a dollop of crème fraîche and a sprinkle of lemon zest.
Notes
- For a creamier texture, substitute half of the vegetable broth with heavy cream.
- Add a pinch of cayenne pepper for a subtle kick.
- You can also garnish with croutons for added crunch.
