Description

A delightful and refreshing Fresh Pea & Mint Soup with Crème Fraîche, perfect for any occasion.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen peas
  • 4 cups vegetable broth
  • 1 cup fresh mint leaves, packed
  • Salt and pepper to taste
  • ½ cup crème fraîche (plus extra for serving)
  • Lemon zest for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the peas and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the peas are tender.
  4. Remove the pot from heat and stir in the fresh mint leaves. Let the mixture cool slightly.
  5. Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  6. Return the soup to the pot and stir in the crème fraîche. Season with salt and pepper to taste.
  7. Reheat gently if necessary, but do not boil. Serve warm, garnished with a dollop of crème fraîche and a sprinkle of lemon zest.

Notes

  • For a creamier texture, substitute half of the vegetable broth with heavy cream.
  • Add a pinch of cayenne pepper for a subtle kick.
  • You can also garnish with croutons for added crunch.
