Ingredients

- 2 large russet potatoes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the potatoes thinly using a mandolin or sharp knife.
- In a bowl, mix the olive oil, minced garlic, salt, pepper, rosemary, and thyme.
- Coat the potato slices in the herb mixture.
- Grease a muffin pan and layer the potato slices in each cup, overlapping them.
- Sprinkle Parmesan cheese on top of each galette.
- Bake for 25-30 minutes until golden and crispy.
- Allow to cool for a few minutes before removing from the pan.
