- 2 large eggplants
- 1 cup walnuts
- 1/2 cup fresh parsley
- 1/4 cup fresh cilantro

Instructions
- Slice the eggplants lengthwise into thin strips and grill or roast them until tender.
- In a food processor, combine walnuts, parsley, cilantro, garlic, salt, pepper, vinegar, and olive oil. Blend until smooth.
- Spread a layer of the walnut mixture onto each eggplant slice.
- Roll the eggplant slices tightly and secure with a toothpick if necessary.
- Arrange the rolls on a serving platter and drizzle with additional olive oil if desired.
- Let the rolls sit for at least 30 minutes to allow the flavors to meld before serving.
