  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Carefully stir in the boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  7. Once cooled, slice each cake in half horizontally to create four layers.
  8. Place one layer on a serving plate. Spread a layer of whipped cream on top and add a layer of Morello cherries.
  9. Repeat the layering process with the remaining cake layers, finishing with a layer of whipped cream on top.
  10. Garnish with chocolate shavings and any remaining cherries.

Notes

  • For a richer flavor, try adding a splash of cherry liqueur to the whipped cream.
  • You can substitute the Morello cherries with fresh cherries or raspberries for a different fruit flavor.
