- 4 large leeks
- 2 tablespoons olive oil
- 1 cup rice
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 1/4 cup fresh dill, chopped
Instructions
- Clean the leeks thoroughly and slice them.
- In a large pot, heat the olive oil over medium heat.
- Add the leeks and sauté until they are soft and translucent.
- Stir in the rice, vegetable broth, salt, and black pepper.
- Bring to a boil, then reduce heat to low and cover.
- Cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and stir in lemon juice and dill.
- Serve warm as a side dish or main course.

- For a richer flavor, use chicken broth instead of vegetable broth.
