Description

A delicious and healthy dish made with leeks and rice, infused with Mediterranean flavors.


Ingredients

  • 4 large leeks
  • 2 tablespoons olive oil
  • 1 cup rice
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 cup fresh dill, chopped


Instructions

  1. Clean the leeks thoroughly and slice them.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the leeks and sauté until they are soft and translucent.
  4. Stir in the rice, vegetable broth, salt, and black pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  7. Remove from heat and stir in lemon juice and dill.
  8. Serve warm as a side dish or main course.
