Green Banana Curry (Matoke Style) is a must-try delight that combines the flavors of coconut and spices with tender unripe bananas.

- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper (to taste)
- 1 can (400 ml) coconut cream
- 1 pound unripe bananas, sliced into thick rounds
- 1 cup vegetable stock
- Salt, to taste
- 1 tablespoon lemon juice
- Chopped parsley, for garnish
Instructions
- Heat the olive oil in a deep skillet over medium heat.
- Add the diced onion and sauté until soft and translucent, about 5-6 minutes.
- Incorporate the minced garlic and ginger paste, stirring for an additional minute.
- Add the cumin seeds, coriander powder, turmeric, and cayenne pepper, mixing thoroughly and cooking for about 2 minutes.
- Gradually pour in the coconut cream and vegetable stock, stirring until well combined and bring to a gentle boil.
- Add the thick banana slices and season with salt. Cover and let it simmer for around 20 minutes, stirring occasionally.
- Once the bananas are tender, drizzle in the lemon juice and adjust seasoning as needed.
- Serve warm, garnished with freshly chopped parsley.

- Adjust cayenne pepper to taste for desired spiciness.
