Description

Green Banana Curry (Matoke Style) is a must-try delight that combines the flavors of coconut and spices with tender unripe bananas.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper (to taste)
  • 1 can (400 ml) coconut cream
  • 1 pound unripe bananas, sliced into thick rounds
  • 1 cup vegetable stock
  • Salt, to taste
  • 1 tablespoon lemon juice
  • Chopped parsley, for garnish


Instructions

  1. Heat the olive oil in a deep skillet over medium heat.
  2. Add the diced onion and sauté until soft and translucent, about 5-6 minutes.
  3. Incorporate the minced garlic and ginger paste, stirring for an additional minute.
  4. Add the cumin seeds, coriander powder, turmeric, and cayenne pepper, mixing thoroughly and cooking for about 2 minutes.
  5. Gradually pour in the coconut cream and vegetable stock, stirring until well combined and bring to a gentle boil.
  6. Add the thick banana slices and season with salt. Cover and let it simmer for around 20 minutes, stirring occasionally.
  7. Once the bananas are tender, drizzle in the lemon juice and adjust seasoning as needed.
  8. Serve warm, garnished with freshly chopped parsley.
