Ingredients

Instructions
- In a bowl, whisk together the eggs, salt, and pepper.
- In a skillet, heat the olive oil over medium heat.
- Add the onion and bell pepper; sauté until softened.
- Add the spinach and parsley; cook until wilted.
- Pour the egg mixture into the skillet; cook until set, folding the omelette in half.
- Serve hot.
