Description

A healthy and delicious green omelette packed with nutrients from vegetables.


Ingredients

  • 1/4 cup spinach, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup green bell pepper, diced
  • 1/4 cup onion, diced
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste


Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper.
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the onion and bell pepper; sauté until softened.
  4. Add the spinach and parsley; cook until wilted.
  5. Pour the egg mixture into the skillet; cook until set, folding the omelette in half.
  6. Serve hot.
