Description

Grilled Sea Bass with Sumac Butter & Lemon Couscous is a must-try!


Ingredients

Scale
  • 2 whole sea bass (about 1 pound each), cleaned and scaled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons sumac
  • 4 tablespoons unsalted butter, softened
  • 1 cup couscous
  • 1 1/4 cups water
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix the softened butter with 1 tablespoon of sumac, salt, and pepper until well combined. Set aside.
  3. Rub the outside and inside of the sea bass with olive oil, salt, and pepper.
  4. Place the fish on the grill and cook for about 5-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
  5. While the fish is grilling, bring the water to a boil in a medium saucepan. Add the couscous, lemon zest, and a pinch of salt. Stir, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff the couscous with a fork and stir in the lemon juice and chopped parsley.
  7. Once the fish is done, remove it from the grill and top each fish with a generous dollop of sumac butter.
  8. Serve the grilled sea bass alongside the lemon couscous.

Notes

  • For added flavor, marinate the sea bass in olive oil, lemon juice, and garlic for 30 minutes before grilling.
  • Substitute quinoa for couscous for a gluten-free option, adjusting the cooking time according to package instructions.
