Description

A delicious and easy breakfast option featuring ground beef and eggs baked within a cheesy crust.


Ingredients

  • 1 pound ground beef
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef, onion, and bell pepper over medium heat until fully cooked.
  3. In a mixing bowl, whisk together the eggs, garlic powder, salt, and pepper.
  4. Stir the cooked beef mixture into the egg mixture, followed by half of the cheddar cheese.
  5. Grease a muffin tin and pour the mixture evenly into the cups.
  6. Top with the remaining cheddar cheese.
  7. Bake for 20-25 minutes or until the eggs are set and the cheese is bubbly.
  8. Allow to cool slightly before removing from the tin and serve warm.
