- 1 pound ground beef
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef, onion, and bell pepper over medium heat until fully cooked.
- In a mixing bowl, whisk together the eggs, garlic powder, salt, and pepper.
- Stir the cooked beef mixture into the egg mixture, followed by half of the cheddar cheese.
- Grease a muffin tin and pour the mixture evenly into the cups.
- Top with the remaining cheddar cheese.
- Bake for 20-25 minutes or until the eggs are set and the cheese is bubbly.
- Allow to cool slightly before removing from the tin and serve warm.
