- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup grated Gruyère cheese
- 1/4 cup chopped fresh chives
- 4 large eggs, separated
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk, cooking until thickened. Stir in the salt, pepper, nutmeg, Gruyère cheese, and chives.
- Remove from heat and let cool slightly, then stir in the egg yolks.
- In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
- Gently fold the egg whites into the cheese mixture.
- Pour into greased soufflé dish and bake for 25-30 minutes or until puffed and golden.
- Serve immediately, garnished with additional chives if desired.
