Description

A light and fluffy cheese soufflé infused with the fresh flavor of chives. Perfect for a special occasion or as a delightful side dish.


Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup grated Gruyère cheese
  • 1/4 cup chopped fresh chives
  • 4 large eggs, separated
  • 1/4 teaspoon cream of tartar


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the milk, cooking until thickened. Stir in the salt, pepper, nutmeg, Gruyère cheese, and chives.
  4. Remove from heat and let cool slightly, then stir in the egg yolks.
  5. In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Gently fold the egg whites into the cheese mixture.
  7. Pour into greased soufflé dish and bake for 25-30 minutes or until puffed and golden.
  8. Serve immediately, garnished with additional chives if desired.
