Description

A flavorful and aromatic chicken stew with a blend of spices and seeds, representing traditional Guatemalan cuisine.


Ingredients

  • 1.5 pounds chicken thighs, bone-in and skin-on
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cups chicken stock
  • 1/4 cup pumpkin seeds (pepitas)
  • 2 tablespoons cilantro, chopped


Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken thighs and brown on all sides. Remove and set aside.
  3. Add the onion and garlic to the pot, sauté until translucent.
  4. Stir in the diced tomatoes and tomato paste, cooking for a few minutes.
  5. Add the spices: cumin, paprika, oregano, black pepper, and salt. Mix well.
  6. Return the chicken to the pot and pour in the chicken stock.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
  8. Stir in pumpkin seeds and cilantro, cooking for an additional 10 minutes.
  9. Serve hot with rice or tortillas.

Notes

  • For a richer flavor, marinate the chicken in spices overnight.
  • This stew can also be made in a slow cooker for enhanced tenderness.
