- 1.5 pounds chicken thighs, bone-in and skin-on
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 4 cups chicken stock
- 1/4 cup pumpkin seeds (pepitas)
- 2 tablespoons cilantro, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken thighs and brown on all sides. Remove and set aside.
- Add the onion and garlic to the pot, sauté until translucent.
- Stir in the diced tomatoes and tomato paste, cooking for a few minutes.
- Add the spices: cumin, paprika, oregano, black pepper, and salt. Mix well.
- Return the chicken to the pot and pour in the chicken stock.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in pumpkin seeds and cilantro, cooking for an additional 10 minutes.
- Serve hot with rice or tortillas.
Notes
- For a richer flavor, marinate the chicken in spices overnight.
- This stew can also be made in a slow cooker for enhanced tenderness.
