Ingredients

  • 2 cups grated carrots
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup applesauce
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the grated carrots, rolled oats, and whole wheat flour.
  3. In another bowl, whisk together the applesauce, honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Add the baking powder, cinnamon, nutmeg, and salt, and mix until smooth.
  6. Pour the batter into the prepared cake pan.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow to cool before frosting or serving.
