Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, mix together the grated carrots, rolled oats, and whole wheat flour.
- In another bowl, whisk together the applesauce, honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until well combined.
- Add the baking powder, cinnamon, nutmeg, and salt, and mix until smooth.
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool before frosting or serving.
