Description

A comforting and nourishing garlic soup made with simple ingredients for a flavorful and healthy meal.


Ingredients

Scale
  • 10 cloves garlic
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups stale bread, cubed
  • 1/4 cup fresh parsley, chopped
  • 2 eggs (optional)


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add garlic and sauté until fragrant and golden brown.
  3. Stir in the smoked paprika and cayenne pepper.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 10 minutes.
  6. Add stale bread and cook until softened.
  7. Blend soup until smooth, then return to pot.
  8. If using, poach eggs in the soup for about 3 minutes.
  9. Serve hot, garnished with fresh parsley.

Notes

  • This soup is best enjoyed fresh, but can be stored in the refrigerator for up to 3 days.
