Ingredients

- 10 cloves garlic
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups stale bread, cubed
- 1/4 cup fresh parsley, chopped
- 2 eggs (optional)
Instructions
- Heat olive oil in a pot over medium heat.
- Add garlic and sauté until fragrant and golden brown.
- Stir in the smoked paprika and cayenne pepper.
- Add vegetable broth and bring to a boil.
- Reduce heat and let simmer for 10 minutes.
- Add stale bread and cook until softened.
- Blend soup until smooth, then return to pot.
- If using, poach eggs in the soup for about 3 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- This soup is best enjoyed fresh, but can be stored in the refrigerator for up to 3 days.
