Description

Healthy Strawberry Oatmeal Bars are a delicious and guilt-free treat made with wholesome ingredients, perfect for a snack or dessert.


Ingredients

Scale
  • 1 ½ cups old-fashioned rolled oats
  • 1 ¼ cups whole wheat flour (or all-purpose)
  • 1/3 cup honey or maple syrup
  • 1/3 cup coconut oil or unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ½ cups diced fresh strawberries
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp sugar (optional, for extra sweetness)


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix oats, flour, honey (or maple syrup), melted coconut oil (or butter), vanilla, baking soda, and salt. Stir until crumbly. Reserve ¾ cup of this mixture for the topping.
  3. Press the remaining oat mixture firmly into the bottom of the prepared pan.
  4. In a separate bowl, toss strawberries with cornstarch, lemon juice, and sugar (if using). Spread the mixture evenly over the crust.
  5. Sprinkle the reserved oat mixture evenly over the top of the strawberries.
  6. Bake for 30–35 minutes, or until the top is golden and the strawberry filling is bubbly.
  7. Let cool completely before slicing into bars. Store in the fridge for up to 5 days.

Notes

  • For a vegan option, use maple syrup and coconut oil.
  • These bars can be frozen for longer storage.
  • Feel free to substitute strawberries with other berries if desired.
