Healthy Strawberry Oatmeal Bars are a delicious and guilt-free treat made with wholesome ingredients, perfect for a snack or dessert.

- 1 ½ cups old-fashioned rolled oats
- 1 ¼ cups whole wheat flour (or all-purpose)
- 1/3 cup honey or maple syrup
- 1/3 cup coconut oil or unsalted butter, melted
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- 1 ½ cups diced fresh strawberries
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tbsp sugar (optional, for extra sweetness)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix oats, flour, honey (or maple syrup), melted coconut oil (or butter), vanilla, baking soda, and salt. Stir until crumbly. Reserve ¾ cup of this mixture for the topping.
- Press the remaining oat mixture firmly into the bottom of the prepared pan.
- In a separate bowl, toss strawberries with cornstarch, lemon juice, and sugar (if using). Spread the mixture evenly over the crust.
- Sprinkle the reserved oat mixture evenly over the top of the strawberries.
- Bake for 30–35 minutes, or until the top is golden and the strawberry filling is bubbly.
- Let cool completely before slicing into bars. Store in the fridge for up to 5 days.
Notes
- For a vegan option, use maple syrup and coconut oil.
- These bars can be frozen for longer storage.
- Feel free to substitute strawberries with other berries if desired.
