Ingredients

- 1 cup cooked brown rice
- 1 can tuna, drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cup diced cucumber
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, diced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine cooked brown rice and drained tuna.
- Add cherry tomatoes, cucumber, red onion, and bell pepper.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper, and mix thoroughly.
- Chill in the refrigerator for 30 minutes before serving.
