This Heavenly Keto Berry Trifle Cake is a delicious low-carb dessert, featuring layers of keto-friendly cake, whipped cream, and fresh berries.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup erythritol sweetener
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 large eggs
  • ½ cup unsweetened almond milk
  • ½ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1 cup fresh berries (strawberries, blueberries, raspberries)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, combine almond flour, erythritol, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together eggs, almond milk, coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until smooth.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let the cake cool completely, then cut it into layers.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. In a trifle dish, layer the cake, whipped cream, and fresh berries.
  9. Repeat the layers until all ingredients are used, finishing with berries on top.
  10. Refrigerate for at least 2 hours before serving.
