A delicious pastry filled with flavorful leeks and fresh herbs.
Ingredients

- 2 leeks, cleaned and sliced
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 egg
- 1 cup ricotta cheese
- 1 sheet puff pastry
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, heat the olive oil over medium heat and sauté the leeks until soft.
- Stir in the thyme and rosemary, and season with salt and pepper.
- In a bowl, mix the ricotta cheese with the egg, and add the leek mixture.
- Roll out the puff pastry and cut it into circles.
- Place the mixture on top of each circle and fold the edges over.
- Bake for 20-25 minutes or until golden brown.
Notes
- Serve warm or at room temperature.
- These tarts can be made ahead of time and reheated before serving.
