Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 3/4 cup warm water
- 1 can black beans, rinsed and drained
- 1 cup sour cream
Instructions
- In a large bowl, mix together the flour, baking powder, and salt.
- Add the vegetable oil and warm water, mixing until a dough forms.
- Knead the dough for about 5 minutes until smooth.
- Divide the dough into equal portions and roll each into a ball.
- Flatten each ball into a tortilla shape.
- Cook the tortillas on a hot skillet for 1-2 minutes on each side until lightly browned.
- In a separate pot, heat the black beans until warm.
- Serve the tortillas with black beans and a dollop of sour cream on top.
Notes
- For a bit of flavor, add spices to the beans such as cumin or garlic.
- Store any leftover tortillas in an airtight container to keep them fresh.
