- 1 pound snow peas, trimmed
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 cup carrots, julienned
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds
- Cooked rice or noodles, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the sliced red bell pepper and julienned carrots to the skillet. Stir-fry for 3-4 minutes until they start to soften.
- Add the trimmed snow peas and continue to stir-fry for another 2-3 minutes until they are bright green and tender-crisp.
- In a small bowl, whisk together the soy sauce, honey, and sesame oil. Pour this mixture over the vegetables in the skillet.
- Toss everything together to coat the vegetables evenly in the sauce. Cook for an additional 1-2 minutes.
- Remove from heat and sprinkle with sesame seeds before serving over cooked rice or noodles.
Notes
- For added protein, include cooked chicken, shrimp, or tofu in the stir fry.
- Experiment with different vegetables such as broccoli, snap peas, or baby corn for variety.
