Ingredients

  • 1 pound snow peas, trimmed
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup carrots, julienned
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • Cooked rice or noodles, for serving


Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Add the sliced red bell pepper and julienned carrots to the skillet. Stir-fry for 3-4 minutes until they start to soften.
  4. Add the trimmed snow peas and continue to stir-fry for another 2-3 minutes until they are bright green and tender-crisp.
  5. In a small bowl, whisk together the soy sauce, honey, and sesame oil. Pour this mixture over the vegetables in the skillet.
  6. Toss everything together to coat the vegetables evenly in the sauce. Cook for an additional 1-2 minutes.
  7. Remove from heat and sprinkle with sesame seeds before serving over cooked rice or noodles.

  • For added protein, include cooked chicken, shrimp, or tofu in the stir fry.
