- 2 cups cooked jasmine rice
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon sesame oil
- Green onions, chopped
- Chicken or beef skewers, grilled
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the pan.
- Add the mixed vegetables to the pan and stir-fry for 2-3 minutes.
- Add the cooked rice, soy sauce, sweet soy sauce, and sesame oil. Stir well to combine.
- Fold in the scrambled eggs and chopped green onions. Cook for an additional 2 minutes.
- Serve the fried rice topped with grilled skewers.
Notes
- For added flavor, marinate the skewers before grilling.
- This dish is great for using leftover rice.
