Instructions
- In a large bowl, mix together the grated potatoes, flour, egg, baking powder, and salt until well combined.
- Fold in the crumbled bacon and chopped green onions.
- Heat a non-stick skillet over medium heat and add a small amount of oil.
- Pour a ladleful of the batter onto the skillet and flatten gently.
- Cook for 3-4 minutes on each side or until golden brown.
- Repeat with remaining batter.
- Serve hot with sour cream.
