Description

Decadent brownies infused with coffee and layered with creamy mascarpone.


Ingredients

Scale
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 tsp salt
  • 2 tbsp instant coffee granules
  • 1/2 cup strong brewed coffee
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 tsp cocoa powder for dusting


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Melt butter in a saucepan. Stir in sugar, eggs, and vanilla.
  3. Sift flour, cocoa powder, and salt together. Fold into wet ingredients.
  4. Dissolve instant coffee in brewed coffee. Mix into batter.
  5. Spread batter evenly in pan. Bake for 25 minutes.
  6. Beat mascarpone and powdered sugar until smooth.
  7. Spread mascarpone layer over cooled brownies.
  8. Dust with cocoa powder before serving.

Notes

  • Use room-temperature eggs for better mixing.
  • Let brownies cool completely before adding mascarpone.
  • Store leftovers refrigerated.
