- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 cup cream cheese, softened
- 1 cup sour cream
- ½ cup granulated sugar
- 2 large eggs
- ¼ cup black sesame paste
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 1 tablespoon black sesame seeds (for garnish)
- Food coloring (optional, for Halloween theme)
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add the sour cream and ½ cup of sugar, and mix until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the black sesame paste, vanilla extract, and flour until smooth.
- If desired, add a few drops of food coloring to achieve a Halloween theme.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the edges are set but the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, sprinkle the top with black sesame seeds for garnish.
Notes
- For a richer flavor, try adding a tablespoon of matcha powder to the batter.
- For a festive touch, use Halloween-themed cookie cutters to cut out shapes from the cheesecake once it’s set, and place them on top for decoration.
