- 3 pounds wild boar shoulder
- 2 tablespoons juniper berries
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 325°F (165°C).
- Rub the wild boar shoulder with olive oil, salt, pepper, minced garlic, rosemary, and thyme.
- Crush the juniper berries and sprinkle them over the meat.
- Place the meat in a roasting pan and pour in the beef broth.
- Cover and roast in the oven for 2.5 to 3 hours, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven, let it rest for 15 minutes, then slice and serve.
Notes
- For a stronger flavor, marinate the wild boar overnight in the juniper berry mixture.
- Serve with root vegetables for a complete meal.
