Description

A savory roast infused with the unique flavor of juniper berries, perfect for a special occasion.


Ingredients

Scale
  • 3 pounds wild boar shoulder
  • 2 tablespoons juniper berries
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped


Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rub the wild boar shoulder with olive oil, salt, pepper, minced garlic, rosemary, and thyme.
  3. Crush the juniper berries and sprinkle them over the meat.
  4. Place the meat in a roasting pan and pour in the beef broth.
  5. Cover and roast in the oven for 2.5 to 3 hours, or until the internal temperature reaches 145°F (63°C).
  6. Remove from the oven, let it rest for 15 minutes, then slice and serve.

Notes

  • For a stronger flavor, marinate the wild boar overnight in the juniper berry mixture.
  • Serve with root vegetables for a complete meal.
