Description

A delicious low-carb soup that combines all the flavors of a bacon cheeseburger.


Ingredients

Scale
  • 6 slices bacon
  • 1 pound ground beef
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cauliflower florets


Instructions

  1. In a large pot, cook bacon until crispy. Remove and chop, leaving the grease in the pot.
  2. Add ground beef, onion, and garlic to the pot. Cook until beef is browned.
  3. Stir in the beef broth, cream, Worcestershire sauce, thyme, salt, and pepper.
  4. Add cauliflower and bring to a simmer. Cook until tender.
  5. Stir in the cheese until melted.
  6. Garnish with bacon pieces before serving.

Notes

  • For a thicker soup, blend some of the cauliflower and return it to the pot.
  • Top with additional cheese and bacon for extra flavor.
