Description
A delicious low-carb soup that combines all the flavors of a bacon cheeseburger.
Ingredients

- 6 slices bacon
- 1 pound ground beef
- 1 cup diced onion
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cauliflower florets
Instructions
- In a large pot, cook bacon until crispy. Remove and chop, leaving the grease in the pot.
- Add ground beef, onion, and garlic to the pot. Cook until beef is browned.
- Stir in the beef broth, cream, Worcestershire sauce, thyme, salt, and pepper.
- Add cauliflower and bring to a simmer. Cook until tender.
- Stir in the cheese until melted.
- Garnish with bacon pieces before serving.
Notes
- For a thicker soup, blend some of the cauliflower and return it to the pot.
- Top with additional cheese and bacon for extra flavor.
