- 2 tablespoons butter
- 3 large eggs, separated
- 1/4 cup erythritol or preferred sweetener
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 375°F (190°C).
- Grease ramekins with butter and place them on a baking sheet.
- Melt the dark chocolate and butter together in a double boiler.
- In a bowl, whisk the egg yolks with erythritol until pale and creamy.
- Add the melted chocolate mixture and vanilla extract to the egg yolks, mixing well.
- In another bowl, beat the egg whites with salt until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture until just combined.
- Divide the mixture among the prepared ramekins.
- Bake in the preheated oven for 12-15 minutes until puffed.
