Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream the softened butter with the erythritol until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Sift together the almond flour, baking powder, and salt, then gradually add to the butter mixture.
- Pour the batter into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
