Ingredients

  • 1 cup almond flour
  • 1 cup erythritol or preferred sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter with the erythritol until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Sift together the almond flour, baking powder, and salt, then gradually add to the butter mixture.
  6. Pour the batter into a greased cake pan.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
