Description

This Keto Greek Spinach Pie is a delicious low-carb alternative to traditional spanakopita, filled with fresh spinach and feta cheese.


Ingredients

  • 1 pound fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup almond flour
  • 3 large eggs
  • 1/2 cup chopped onion
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add spinach to the skillet, cooking until wilted.
  4. In a bowl, mix spinach, feta, eggs, almond flour, salt, pepper, garlic powder, and oregano until combined.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 35-40 minutes or until set and lightly golden on top.
  7. Let it cool slightly before slicing and serving.
