Description

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup warm water (about 110°F)
  • 1 tablespoon vegetable oil
  • 1 cup kimchi, chopped
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon sesame oil
  • Vegetable oil for frying


Instructions

  1. In a large mixing bowl, combine the flour, sugar, instant yeast, baking powder, and salt. Mix well.
  2. Gradually add the warm water and vegetable oil to the dry ingredients, stirring until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. While the dough is rising, mix the chopped kimchi and shredded mozzarella cheese in a separate bowl. Set aside.
  6. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball.
  7. Flatten each ball into a disk about 4 inches in diameter. Place about 2 tablespoons of the kimchi and cheese mixture in the center of each disk.
  8. Carefully fold the edges of the disk over the filling, pinching to seal it tightly. Roll it back into a ball.
  9. Heat a non-stick skillet over medium heat and add a little vegetable oil. Place the stuffed dough balls seam-side down in the skillet.
  10. Cook for about 3-4 minutes on each side, pressing gently with a spatula, until golden brown and crispy.
  11. Drizzle sesame oil over the pancakes while cooking for added flavor. Serve hot.

Notes

  • For a spicier version, add a teaspoon of gochugaru (Korean red pepper flakes) to the kimchi and cheese mixture.
  • You can substitute the mozzarella cheese with cheddar or pepper jack for a different flavor profile.
